Tomatoes are a funny fruit. Often thought of as a vegetable with most people only indulging in them via ketchup or pasta sauce, tomatoes pack a ton of flavor and nutrients in their small form. This bacon maple roasted tomatoes proves that they really can taste good!

There are many different colors, sizes, and shapes of tomatoes. For this recipe and for the best use of them, the grape tomatoes are our go-to. The grape tomato’s size makes them perfect for appetizers, toppings, or easily adding them to other dishes. 

The trick to getting others to enjoy tomatoes as much as you do, is strategically adding complimentary flavors that won’e over power their natural sweetness. For these roasted tomatoes, we used a combination of savory and sweet flavors to really overwhelm your taste buds in the most delightful way!

One of the sweet and savory flavors we roasted these tomatoes with is a bacon barrel aged maple syrup. Yes, you read that right! While the name says bacon, it actually contains NO animal products yet has all the smoky flavor of bacon. If your taste buds are fine tuned, you’ll even pick up an undertone of bourbon notes. 

Since these little guys require a few hours to roast, you will need to plan ahead of time when making these. If you meal prep over the weekend, toss these in the oven first to give them a head start.

Once these seasoned tomatoes hit a semi-dried state in the oven they are ready to eat. We loved using them as a pizza topping, tossing in salads or with other roasted veggies, and even adding them to an antipasto plate. Really, the possibilities are endless.

Bacon Maple Roasted Tomatoes Recipe

Smoky yet sweet semi-dried tomatoes.

Total Time: 3 Hours & 5 Minutes

Ingredients

  • 1 pint Grape Tomatoes
  • 2 tbsp Bacon Barrel Aged Maple Syrup (divided)
  • 2 tbsp Olive Oil
  • 1/2 tsp Thyme
  • 2 cloves Garlic (minced)
  • Sea Salt & Pepper (to taste)

Bacon Barrel Aged Maple Syrup

100% pure maple syrup aged in small batch smoky bourbon barrels for up to 18 months!

Prep

  1. Preheat oven to 250F degrees.

  2. Wash and dry tomatoes. Cut in half.

  3. Arrange tomatoes, cut side up, on a lined baking sheet or glass baking dish.

  4. In a small bowl, whisk together 1 tbsp bacon maple syrup, olive oil, thyme, garlic, salt, and pepper. Drizzle mixture over arranged tomatoes.

Cooking

  1. Place uncovered baking sheet with tomatoes in oven to bake for 2 hours.

  2. Check at the 2 hour mark. Tomatoes will be ready when they are half-dried. If not quite done, cook for up to 1 more hour, checking every 30 minutes.

  3. Once tomatoes appear half-dried, drizzle remaining bacon maple syrup over the top. Return to oven for 15 minutes.

  4. Enjoy right away or store in the fridge for up to a week.

Pro Tips

  1. Substitute bourbon or whiskey maple syrup for the bacon barrel aged maple syrup.

  2. Try different herbs instead of the thyme like basil. Fresh herbs will give these tomatoes an even bigger burst of flavor!

  3. The toaster oven dried the tomatoes out quicker than the traditional oven. This may require you to adjust your time closer to the 3 hour mark when roasting these.
