Ingredients
3lbsSweet Potatoes
1Orangejuiced
1/2Orange Rindcut in slices
1 1/2cupsChicken or Turkey Stock
1/3cupBourbon Barrel Aged Maple Syrup
4TBSPButtersliced
3slicesBaconcooked & chopped
1/2cupPecanschoppped
1Bay Leaf
1tspCinnamon
1/8tspCloves
1pinchThyme
Salt & Pepperto taste
Instructions
Prep
Wash, peel, and cut sweet potatoes into pieces no larger than 1 inch.
Cooking
Cover sweet potato pieces with cold water and bring to a boil. Cook until tender. Drain then return to pot.
Meanwhile, place stock, syrup, bay, cinnamon, cloves, orange juice and rind, butter, thyme and salt & pepper in a small pot over medium-low heat. Cook until sweet potatoes are tender.
Remove stock from heat and strain into sweet potatoes. Mash potatoes.
Stir in bacon pieces. Adjust seasoning to taste.
Top with chopped pecans.

Use candied pecans for an even sweeter dish.
Switch the bourbon syrup for chai tea barrel aged maple syrup to add a bit more spice.
Replace half of the broth with heavy cream for a creamier mash.
